JAILHOUSE POTATO-CINNAMON ROLLS

 I found this on The Recipe Link and have to try it:
"Years ago, a close relative sent me a newspaper recipe clipping for potato dinner rolls that were popular with the inmates at Jefferson County Jail. I transformed the recipe into these potato-cinnamon rolls and named them accordingly."

FOR THE DOUGH:
2 medium russet potatoes
1 ounce active dry yeast (4 packets)*
3/4 cup plus 1 teaspoon sugar
1 cup (2 sticks) unsalted butter, melted
3 large eggs
2 teaspoons salt
9 cups unbleached flour

FOR THE FILLING:
4 cups pecans
4 cups firmly packed golden brown sugar
2 tablespoons ground cinnamon
1 cup (2 sticks) unsalted butter, melted

FOR THE ICING:
2 1/2 cups powdered sugar
1/4 cup milk
1/2 teaspoon vanilla extract

TO PREPARE THE DOUGH:
Fill a large saucepan three-quarters full with water and set on high heat to boil. Peel and quarter the potatoes. Add the potatoes to the water and bring to a second boil. Decrease the heat to medium until the potatoes are simmering. Cook the potatoes until tender when pierced with a fork, about 10 to 15 minutes. Remove the potatoes, reserving 3 cups of the cooking water. Set the potato water aside to cool, until it registers 110 to 115 degrees F on a candy thermometer.

In a large bowl, mash the potatoes - you will have 1 1/2 to 2 cups worth - by hand or using a mixer on medium speed.

In a medium bowl, mix the reserved cooled potato water, yeast, and the 1 teaspoon of sugar. Stir until the yeast has dissolved. Let the mixture rest until foamy, about 5 minutes.

In a large bowl, whisk together the potatoes, 1 cup sugar, melted butter, eggs, salt, and yeast–potato water. Add the flour in 3-cup increments and stir with a spoon until the flour is incorporated. Place the dough in a large greased bowl. Cover with a damp cloth and leave in a warm place until the dough doubles in size, about 1 to 1 1/2 hours.

Leaving the dough in the bowl, punch it down until it deflates (1 or 2 punches with your fist will do). Cover the bowl with plastic wrap.

At this point the dough can be refrigerated until the next day.

TO MAKE THE FILLING:
Preheat the oven to 350 degrees F.

Arrange the pecans on a baking sheet in a single layer and toast them in the oven for 7 to 9 minutes, until golden brown and aromatic. Coarsely chop the pecans.

Combine the brown sugar and cinnamon in a medium bowl.

TO SHAPE AND BAKE THE ROLLS:
Remove the dough from the bowl and divide it in half. On a clean, floured surface, roll each half into a 1/4-inch-thick rectangle. Spread each rectangle with half of the melted butter. Cover each buttered rectangle with half of the brown sugar mixture. Sprinkle the dough with an even layer of pecans.

Generously grease two (9 by 13-inch) disposable pans with butter.

Carefully roll up each rectangle, starting on 1 long side of the dough. Using a very sharp serrated knife, cut each roll crosswise in 2-inch slices. Place the slices, cut side down, in the pans, spacing the rolls about 1 inch apart so they have room to expand. Make sure the end flap of each roll is set snugly against a side of the pan, so it does not unravel while rising. Put 8 rolls in each pan.

(At this point the rolls can be tightly covered in a layer of plastic wrap and a layer of foil and frozen up to 3 weeks. Defrost the rolls in the refrigerator overnight or for 1 hour at room temperature and continue following the directions from this point.)

Set the rolls in a warm, draft-free place and let them rise until they get puffy, 45 minutes to 1 hour.

Preheat the oven to 375 degrees F.

Bake the rolls for 20 to 25 minutes, or until light brown.

TO MAKE THE ICING:
Combine the powdered sugar, milk, and vanilla in a medium bowl. Spread the icing on top of the rolls while they are still warm.

Serve warm or at room temperature.

RATHER SWEET VARIATION:

FOR ORANGE-POTATO ROLLS:
Prepare the dough as directed. For the filling, substitute 4 cups granulated sugar for the brown sugar, omit the cinnamon, and stir in 2 tablespoons grated orange zest. For the icing, substitute 1/4 cup freshly squeezed orange juice for the milk, and substitute 1 tablespoon grated orange zest for the vanilla.

*TIP: Is it dead or alive? Mixing the yeast with water and sugar and waiting a few minutes to see if it will foam tells you whether the yeast is viable. If it doesn't foam, the yeast is dead and your rolls won't rise. Throw the mixture away and start again with a new batch of yeast. By "proofing," or testing, the yeast's viability, you avoid wasting a whole batch of dough and a whole lot of time.

Makes 24 large rolls

Fancy Grilled Cheese

Trying to diet is killing me.  I justified indulging in some buttery carbs by watching my portions and adding in a healthy sized meat and veggie serving... don't you judge me. ;)

2 slices 98 calorie bread
Butter --I still won't go margarine
Cheddar
Sliced Avacado, tomato, and lettuce
provalone

Arrange so you have one kind of cheese on each slice of lightly buttered bread and the meat and veggies in between.  Cook on medium heat in a skillet until both sides are golden brown.

I had something similar at Cubby's.  They have cranberries on theirs. SO GOOD.

Cranberry Nut Bread

 This recipe came from my Mom- I have no idea where she got it, but we've had it around for years!

1 beaten egg
2 tbs melted shortening (I usually forget to add this, oops!)
1/2 cup prepared orange juice
2 tbs hot water
 
Add dry ingredients
 
2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 tsp baking powder
 
Mix well, then fold in
 
1/2 cup walnuts
1 cup raw cranberries, cut in half (hint: it is easier to slice them if they have been in the freezer for a while)
 
Dough will be thick and kind of sticky.
 
Pour in greased and floured pan (about 2/3 full)
Bake at 325 for about 1 hour, or until toothpick comes out clean

Alternative to fried dough

I LOVE fried dough/western scones. I don't love the added oil, grease, splatters, calories, and using an entire bottle of oil I have to dispose of later.

My daughter and I, while preparing a favorite snack of fresh tortillas, decided to experiment a bit.



We liked it so much it was our breakfast this morning and was SO STINKING GOOD!
All you do is heat the uncooked tortillas on a clean dry skillet per directions on the package, butter them, and add your favorite scone toppings.

Lipton's white pizza dip

So good! So easy!  Think Really yummy Artichoke dip meets cheesy bread.

  • 1 envelope Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix
  • 1 container (16 oz.) sour cream
  • 1 cup (8 oz.) ricotta cheese
  • 1 cup shredded mozzarella cheese (about 4 oz.)
  • 1/4 cup (1 oz.) chopped pepperoni (optional)
  • 1 loaf Italian or French bread, sliced

DIRECTIONS

1. Preheat oven to 350°. In shallow 1-quart casserole, combine Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix, sour cream, ricotta cheese, 3/4 cup mozzarella cheese and pepperoni.   2. Sprinkle with remaining 1/4 cup mozzarella cheese.   3. Bake uncovered 30 minutes or until heated through. Serve with bread.

Traditional Irish Soda Bread Farls




Place a large flat skillet, lightly floured on the stove over medium low heat.
2 C Flour
1/2 tsp Salt
1 tsp Baking Soda (Sifted)

fluff together in a large bowl and make a large hole in the center


1 Cup Buttermilk
fill the hole with the buttermilk and quickly mix into a dough.


Place dough on a floured surface and gently knead into a ball, then press into a disk about 1/2 in thick.
cut disk into 1/4 pieces (Farls)

Place your fourths/Farls on the floured, heated skillet and cook until golden brown (about 5 min) flipping once to brown the other side (another 5-ish minutes)

Think really dense KFC biscuit with butter and jam....but better.  Also, the dough can be fried like a scone or baked into a bread.

1 hour bread and Carrabbas style dip

Slightly adapted from the original Pantry Secrets recipe:


10 1/2 C white BREAD flour
1/2 C Sugar
3 rounded TB of fast rising yeast
3 TB (approx) oil or liquid lecithin (don't measure.  Just glug it in so it looks about right)
4 C hot tap water

Mix dry ingredients
add oil and water
mix for 1 min and if it is too dry add water
DO NOT ADD flour after it is done mixing
Spray counter and pans with pam
shape loaves (makes 4) place in pans
Cover with a towel and let raise 25 min
Bake at 350 for 25 min

That's it!  I used 2 loaves worth for the braided loaf.



Carrabbas style dip

1 Tbsp crushed red pepper flakes
1 Tbsp crushed black pepper
1 Tbsp dried oregano
1 Tbsp dried rosemary
1 Tbsp dried basil
1 Tbsp dried parsley
1 Tbsp minced garlic
2 tsp garlic salt

combine and add 1 TB spice mixture to a small bowl and add Olive Oil to taste.

Super Easy Conference Orange Rolls

Rolls

1/2 C melted butter
1/2 C sugar
1 orange peel grated
18 frozen dinner rolls (Like Rhodes)

mix butter, sugar and peel in a bowl, dip frozen rolls in mixture, place in muffin tins.
Let rise 3 hours.
Bake at 350 0-15 min or until lightly browned
Frost with glaze while still warm


Glaze

1 C powdered Sugar
2 T butter (softened)
2 T orange juice

Mix and spoon over warm rolls.

Homemade Pizza From Scratch



Sauce:

1 6 oz can of Tomato paste
1 1/2 C water
1/3 C. EVOO
2 cloves of Garlic minced
salt and pepper
1/2 Tb chopped fresh oregano leaves
1/2 Tb chopped fresh Basil leaves
1/2 Tb chopped fresh rosemary leaves
(you can use dried, but you'll have to tweak it to taste)

Mix together all ingredients making sure to dissolve the tomato paste and let sit for a few hours to get a better flavor.  No need to cook it, just spread it on the crust.

Crust:

2 1/4 tsp dry active yeast
1/2 tsp brown sugar
1 1/2 cups warm water (110 degrees)

In a large bowl or mixer, dissolve yeast and sugar in the water and let sit for 10 min.

Stir in
1 tsp Salt
2 Tb EVOO
then 2 1/2 C Flour  (for higher elevations, use 3 C)

For mixers, use bread hook and add small amounts of flour intil the dough is no longer sticky.  For old school, Turn out dough onto a well floured surface knead in flour to same effect.

Place the bowl in a well oiled bowl, cover with a warm, damp cloth, and let rise to double (about 1 hour)  I set the over to warm and then turn it off and place the bowl in there.

Punch down dough, and make into a tight ball.  let it sit and loosen for about a minute.

Roll or toss Pizza to fit your pizza stone or pan.  Add sauce and desired toppings.  This one has 4 cheeses.  And we had a smaller Pizza sheet, as my stone broke *sniff*  So the result as a BeauJo's Pizza effect with fantastic crust that doubled for tasty bread sticks.

If there is excess dough, roll and twist to form the crust and use a knife to make small slices around the crust.

Bake in preheated oven at 450  Using a stone, bake immediately.  For a pan, lightly oil the pan and let the dough rise another 15-20 minutes before topping and baking it.

Cook time is about 15-20 min. until the cheese and crust are golden brown.

Stuffed Crescent "Muffins"

 So I will admit I am a huge fan of anything that helps make dinner time quick and easy in our life. I found that Pillsbury is now making unperforated rolls of crescent roll dough. (Available in your refrigerated dough section.) I whipped this together with leftovers from my fridge. This is a pizza-ish version, but I can see myself getting really creative stuffing other things in there too. I already have plans to try out a breakfast version stuffed with fruit. Here's the "recipe":

1. I took a muffin pan and sprayed it with no-stick oil.
2. I then cut out square pieces of the crescent roll dough and lined muffin cups, leaving the corners sticking out the edges. ( I got twelve muffins out of two rolls, but you could probably get more if you cut your dough squares smaller)
3. I then stuffed the dough with a cheese mixture. ( I used a ricotta/mozzarella  mixture similar to what you would use in lasagna)
4. I had some left over cooked hamburger and sausage, so that went in too.
5. We like mushrooms and olives in our house, so a few of those got tossed in.
6. I then gently folded the edges of dough that were sticking up around the edges over, to make a cute little top.
7. Follow baking directions on the crescent roll wrapper, it took mine less than 15 minutes to bake. 
8. I served with leftover spaghetti sauce to dip it in and a salad.

Cinnamon Oat Scones

These are the east coast/english kind, not fried dough.



Preheat oven to 400, line a cookie sheet with parchment paper

2 C plain flour
2/3 C oatmeal
1/3 C. Brown Sugar
1 1/2 Tsp Baking powder
1/2 Tsp cinnamon
6 Tbs Butter

Combine and cut in butter so it looks crumbly and fine

2 eggs
5 Tbs cream

Blend until smooth
Pour into oatmeal mixture
(optional: add chopped nuts, chocolate chips, or dried raisins or cranberries)
make into dough ball
Place dough ball on parchment paper and roll out into a 9 in. circle

brush lightly with cream on top and sprinkle with cinnamon sugar

cut 6 wedges and separate slighty before baking

Bake for 12-15 min until edges are golden brown.  Serve hot with butter

My breadstick secret is out.... :)

Carrie asked me to share my bread-stick recipe that was pictured in a previous photo. Well here it is- my secret is out- I CHEAT! 


I have found these awesome crescent roll "rounds" at my grocery store- and I love them! I have unrolled and stuffed them, cinnamon roll style. (see older posts of mine)   I have seasoned them with garlic salt or spread a light layer of pesto on them for extra flavor. I have even unrolled them, let the kids twist them, and bake them like bread-sticks instead of rounds. (Have I mentioned yet that I love them?) Then I follow the cooking times on the package. I hope you enjoy my secret!

Breakfast sandwiches


Fry an egg
Toast some bread and butter it
Slice cheese enough to cover the bread
slice of ham
Stack it together.

I like to have a runny egg, myself.  I break the yolk before closing the sandwich.
Do this on an English muffin and Poof!  A really inexpensive Egg McMuffin

Grandma Teasdale's Pumpkin Coconut Bread

1 1/3 C oil
5 eggs (beaten)
1 small can pumpkin

Beat together and add:

2 C sugar
2 C flour
2 pkg coconut cream pie filling
1 tsp Cinnamon
1 tsp nutmeg
1 tsp baking soda
1/2 tsp salt
Nuts (optional)


Makes 4 small or 2 large loaves
325 degrees
45 min for small loaves
60 min for large laoves

Quick Spinach Dip

Great with Rye bread, veggies, or chips.

Ingredients:
1 oz.   Hidden Valley® The Original Ranch® fat free dip mix
16 oz. fat free sour cream
10 oz. Package frozen spinach (I use 5 onces per mix and freeze the rest for next time.)
 


Directions:
Mix ranch packet with sour cream.
Add frozen spinach (thawed and well drained).  
Mix and let chill for 1 hour before serving.

Thank goodness for Mom!

After a long day of running around and seeing old friends, the last thing I wanted was to come home and cook or clean.  I opened the door to a housewife's dream!  Someone else had cleaned up and prepared yet another lovely dinner.  I love that we've joined forces with my parents. 

So, here is tonights dinner.  Mom made salsbury steak, steamed broccoli, and banana squash.  The kids loved it!  I don't know what the woman does with squash, but it tastes so much better than anything I make.



For dessert we had Mom's banana-date bread and Butter pecan icecream.   YUM!

Healthy Pumpkin-Apple Harvest Cake


Hi everyone! My name is Lauren. Carrie and I went to high school together and now I live in Fort Collins, Colorado with my husband, Jeremy and son, Jackson. Jackson turned 1 last week. I spent a while looking for a healthy cake recipe for him to have on his special day. This recipe, from a "green" parenting blog turned out wonderfully! It calls for several organic ingredients, but if you aren't into that thing, you can just use "regular" ones and it is still just as good...and way less expensive! This is also a great breakfast food...without frosting, of course!



Ingredients
  • 1 cup canned pumpkin puree
  • 2 large beaten eggs
  • 3/4 cup organic sugar
  • 3/4 cup all purpose, unbleached flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 cup chopped apple (I recommend dicing)

Directions
  • Pre-heat your oven to 325 degrees. Grease and flour an 8" round pan. You can also use cupcake papers if you want to make individual cakes. This yields 8-9 standard sized cupcakes.
  • Combine pumpkin, eggs, and sugar.
  • Add flour, cinnamon, baking powder, ginger, and salt to the pumpkin mixture. Stir to combine.
  • Add apples, stir again, and pour into pan (or cupcake papers...mostly full).
  • Smooth batter out and bake for 20-25 minutes (cupcakes too).
  • Cool in pan on a wire rack for 10 minutes. Then, invert onto the rack, remove pan, and cool completely. For cupcakes, pop out of pan and let cool on a wire rack.

  • Note: Smoothing out the batter ensures a "nice" looking cake. Pumpkin bakes in whatever shape the batter is in when you bake it!
  • When cooled, dust with powdered sugar or a frosting! Deeeelicious!

Super Moist Corn Bread

Best Cornbread Ever

Description:
moist and delicious!

Directions:
1/2 c butter or margarine
ADD and STIR well: 2/3 c sugar
Blend in: 2 well beaten eggs
Combine and ADD:
1 c buttermilk (1 c milk with 1T vinegar)
1/2 tsp soda
Add and Stir: 1 c cornmeal
1 c flour
1/2 tsp salt
Put in greased 8 in square pan. Bake 375 for 30 min.
