There was a comment left on my post about apple pie that amused me no end. The Anonymous commenter had very obviously not read the recipe post, and furthermore, made the point of this blog more apparent to me. The comment was: "pie filling from a can. way to go martha stewart. " While I get that there are always people on the Internet that troll for the opportunity to be contrary and really should be ignored, I thought this was a great opportunity to explain why I began this blog.
There is always room for easy cooking AND a little "Martha Stewart" or Emeril.
From every angle of our lives as women, homemakers, working women and moms, aunts, grandmothers, etc. There are high expectations that either push us to frustration or make us just give up. This is even more true when it comes to the kitchen. This is so sad. We are hard enough on our selves with out having to endure more fuel to our kitchen woes fire. Food is what brings families together. In some families, it is all they do together. If your choice for feeding your family is a bowl of cereal for dinner or eating out, every single night.... well, you're either trying so hard you can't live up to your expectations so you quit, or just not trying at all. Yet you also don't need to spend hours cooking and creating, make a gorgeous center piece out of what once was belly button lint to add to an $80 meal your kids won't eat.
When I became a wife and mom, I knew how to make very few things. Sure, I had enough basics to follow a recipe and I knew a few basic recipes by heart. It wasn't until I began gaining the collective kitchen knowledge of the family my hubby and I had and our more artsy-foodie friends, that I began to realize how much variety and availability each household and situation has. Not to mention the camaraderie in cooking with other women. Some of my best friends have shared a kitchen and their table with me and I have been honored to have them at mine. We can all learn from each other is we put aside those crazy expectations of perfection and just be one of the girls who knows her way around a kitchen.
Some nights you are on the run; some mornings you just don't feel like making a big fuss. There are those days when you are so sick of coming up with lunch ideas that you want to scream and call the pizza guy. Then you look at how much you've already called the pizza guy and how much you could have spent eating real food. Here is a place you can grab an idea and whip something up that enriches your family, your health and your confidence as a homemaker. Now, if you have time to make it look amazing, then more power to you.
A woman who loves to feed her family is a woman who thinks about other people and what is best for them. The secret is she doesn't have to break her neck or the bank to do it.
So YEP! Canned is great if that's what you've got. Because, be it pie filling or veggies or cream of something casserole, it sure beats Del Taco for the umpteenth time this month, is more nutritious and your family will think you care about them... particularly if you make it look nice. Think about it. If you take your kids to a fancy restaurant, tell them to order cheap or split a meal so you can eat nice, it isn't the same as making that same meal in the all you can eat form for 8 people at the cost of one plate at the restaurant. That makes your kids and hubby happy and you have more money left to do an activity with your family.
I have a load of recipes that make my family feel loved and special and it only takes a little elbow grease, 30 minutes and 10-15 dollars to do it. And they all agree a place setting is so much more personal than the gift bag full of greasy, who knows what's really in it, here just eat, "food."

Battle of the Bulge... in the breast. Food for thought.
A year ago last October, my sweet Momma had a breast cancer scare. This year, we are back in the saddle. So, as we worry and wait to find out one way or another, (rather than feel helpless) I have gone to where I now vent my stress into a creative passion: The kitchen. I have been researching cancer fighting foods. The funny thing is that it isn't that different from the healthy diets your doctor tells you about. So my new theory, is why wait until you know have cancer to eat the way you should? None of it is really drastic or weird. High in fiber foods, leafy greens, beans and legumes, etc. I'll be posting some of our family tested "cancer fighting" meals and some that I want to try and will inevitably lose due to my organization issues.

Cooking for Newbies:

Help!
Maybe its the weather or something in the water, but I have been so unmotivated this week. I need menu ideas for the SUPER LAZY cook.
Do you guys have those easy and fast but the family loves it recipes? LETS HAVE 'EM! Please? Last night I was so lazy we ate a big dinner roll with colby jack cubes, strawberries, salad and a veggie platter. On paper plates. LOL

Food reports back on...
Okay ladies--and any men who might visit the blog.
Richard and I have had our cholesterol taken and we are both too high. We need to cut out the fastfood, fried food, and fatty foods that aren't necessary. To keep myself in check, I'm going to do our food reports again. Will you guys do it too? I need some support here. If I know people are looking and that I'm not the only one, I'm more likely to behave my self. LOL Comment or post with your food report for the next six weeks and we'll figure out something fun to do for the most healthy and frugal family chef. :)

HELP!!!
I recently added a new member to my family and am now a mother of 4. Life is going pretty well, except I find that my afternoon and evenings are a nightmare. Picking up kids and then trying to soothe a hungry baby who is having his fussy period of the day, on top of managing homework and normal day to day meltdowns of the younger set leave dinner time a bit hectic.
Although I like to think that I typically "have it all together" mentally... lately "new mommy brain" has settled in and I can't seem to think clearly when I need to, namely at dinner time. Dinner needs to be quick, tasty, and kid-friendly. (extra emphasis on the quick!) DOES ANYONE HAVE ANY RECIPES TO SHARE? PLEASE?

Lunches the dilemma
Lunches are tough for me. Half the time its just myself and the girls and what's the point in cooking anything significant? The other half, Richard comes home for a short while and wants something significant and I had no idea he was coming home till he's home for 30 min, hungry and in a rush. Hmmm....
What to have on hand for these days? Left overs are good, when we have them. But when time is tight and we've eaten the same leftovers for a couple of days or don't have any, I tend to cheat and have Richard go pick something up for everyone on his way home. This is bad for business, since it now costs about $15-$20 for fast food or take out for our family.
For the girls when its just the three of us, I have my standbys:
the dreaded Mac and Cheese
PB & J
Peanut Butter and Bananas on raisin bread
Can of soup
Hot dogs/corn dogs
Fish sticks/fillets
Grilled cheese
--You get the point.

What's the Stroggie Story?
Since being married, I've noticed that everyone seems to have a different Stroganoff recipe. What's yours? I don't know why there's so many variations, but I seems to enjoy them all and like the variety. If you've got one, post it as a comment or create a post and label it "Stroganoff."
Here's ours:
*1 lb Stew meat cut into small chunks (Canned beef chunks work well too)
*1/2 tbsp dried onion
*2-3 cans Cream of Mushroom
*about 1/2 cup sour cream
*1/4 cup Beef Broth
*Worcestershire (a few shakes)
*Cooked egg noodles
Cook the meat all the way through in the onion
Drain any access grease or water
Add soup, sour cream, broth, Worcestershire and stir on med heat till hot
Serve over Cooked egg noodles.

Why the blog?
I have friends with recipe blogs that I visit and sometimes contribute to as well. The problem is, a lot of the recipes are things my kids won't go near, or that aren't cost effective. Easy is nice, but in these times, food storage friendly or especially budget friendly is key.
For example, if i have a recipe that only costs $10 to feed my soon to be family of 5, yet the kids don' eat it and the food goes to waste, what's the point? Some times the kids have to deal, but in the case of Zatorrain's, which i love and is dirt cheap, I'm the only one who eats enough of it to make it worth while.
Also, I'd like to use the labels to make my menus. So if I need to make something fast and easy with chicken, I click the chicken label or the easy label and get my recipe and ingredients right there. Kinda handy.
I'm also looking for bargains and coupons etc. to help out. So any links or tips would be great. I'm inviting all of you as authors, so add and label your additions to share. Thanks guys!
