Saturday Denver Lunch Post -Panchetta

Went shopping for the week and was craving Carrie's Panchetta. Came home and immediately made it for lunch with only one small change. I substituted regular bacon for reduced sodium/reduced fat turkey bacon. If you swap, I recommend making the bacon in the microwave with a paper towel, it makes it really crispy and all the fat drains off.
